1. No Mold in Grandma's Kitchen
=================================
The image of the classic Grandma's kitchen has the smell of good food and spices. Especially at holiday time where scents of cinnamon, cloves, and citrus permeate the household. Throw in a little baking soda and vinegar for the clean-up (pre-Clorox days) and we've got an environment where there was probably very little mold.

Natural substances such as spices, fruits, and plants can keep mold and mildew in check. Today, household mold is a serious problem, it can even be deadly. It's a problem because there are so many man-made chemicals in our environment that have upset nature's ecological balance. Many of these chemicals, which are contained in common household cleaning products, kill all of the microbes - including the good bacteria that keep mold and mildew in check.

We want certain bacteria in our environment - we need it - it protects us. That's why we should not be using "anti-bacterial" soaps and cleaners. Because they kill everything, and then we become an open target for the overgrowth of the "bad guys", the harmful mold and fungus. Clorox (chlorine) does the same thing and even the fumes can affect health.

So what do we do? We watch how nature protects and cleans itself and then we copy it. The plant kingdom - when undisturbed - has the ability to control the overgrowth of mold, fungus, and pathogenic organisms from growing where they shouldn't be growing. That's because there are properties in plants, shrubs, fruits, trees, etc., that prevent that overgrowth from occuring. 2. Eyebone Connected to the Liverbone
======================================
Remember this song?. . ."thigh bone connected to the shin bone. . .shin bone connected to the ankle bone. . ." it makes me chuckle. I can't remember the context for this childhood song (maybe you readers can fill me in!) but it was a good learning tool about how our body is "mechanically" connected.

There is also a connectedness in our body that is not "mechanical". There is an interconnectedness between body parts that doesn't make any sense in the "mechanical" model, but it does in the "holistic" model. This is a big part of the difference in conventional medicine and holistic medicine. This holistic interconnectedness has its basis in the Eastern model. For example, acupuncture operates on this theory of interconnectedness - that is why a needle in the toe might help the pain in the neck.

In Chinese medicine and in the eastern healing arts - the eyes are connected to the liver. I learned about this years ago in my macrobiotic cooking classes. When we eat liver supportive foods we can help our eyesight.

My acupuncturist Wayne and I were talking last week about the tremendous health benefits of the Ningxia Red juice. I told him that I increased the amount I was drinking from the recommended one ounce a day to 4 - 6 ounces. I did this because I heard Marcella Von Harding from Young Living recommend that with the higher dose we can really see the miracles. I noticed an improvement in my vision within one week. I also commented to Wayne that people expect this juice to be real sweet like other juices on the market.

It's not, because it doesn't have the junk juices in it like the high sugar/low cost apple, grape, and pear juices. 5.Recipe of the Week: Kale and Roasted Vegetable Soup
======================================================
Ingredients:
3 medium carrots, peeled and quartered lengthwise
2 large tomatoes, quartered
1 large onion, cut into 8 wedges or 4 or 5 slices
1/2 small butternut squash, peeled, seeded, cut lengthwise into 1/2 inch thick wedges
6 garlic cloves
1 Tbs olive oil
6 cups or more of vegetable broth
4 cups of finely chopped kale
3 large fresh thyme sprigs
1 bay leaf
1 15 oz can of Great Northern white beans, drained

--Preheat oven to 400 degrees F (reduce heat if using oven fan).
--Spray rimmed baking sheet with nonstick oil spray. Arrange carrots, tomatoes, onion, squash, and garlic on sheet.
--Drizzle with olive oil.
--Sprinkle with salt and pepper.
--Toss to coat. Bake until vegetables are brown and tender, stirring occasionally, about 45 minutes.
--Transfer carrots and squash to work surface. Cut into 1/2 inch pieces; set aside.
--Peel garlic cloves; place in processor.
--Add tomatoes and onion; puree until almost smooth.
--Pour 1/2 cup broth onto baking sheet; scrape up any browned bits.
--Transfer broth and vegetable puree to large pot.
--Add 5 1/2 cups broth, kale, thyme and bay leaf to pot.
--Bring to boil.

Reduce heat. Simmer uncovered until kale is tender, about 30 minutes. Add beans, carrots, and squash to soup. Simmer 8 minutes to blend flavors, adding more broth to thin soup if necessary. Season with salt and pepper. Discard thyme sprigs and bay leaf. Can be made a day ahead. Serves six.
