1. No Mold in Grandma's Kitchen
=================================
The image of the classic Grandma's kitchen has the smell of good food and spices. Especially at holiday time where scents of cinnamon, cloves, and citrus permeate the household. Throw in a little baking soda and vinegar for the clean-up (pre-Clorox days) and we've got an environment where there was probably very little mold.

Natural substances such as spices, fruits, and plants can keep mold and mildew in check. Today, household mold is a serious problem, it can even be deadly. It's a problem because there are so many man-made chemicals in our environment that have upset nature's ecological balance. Many of these chemicals, which are contained in common household cleaning products, kill all of the microbes - including the good bacteria that keep mold and mildew in check.

We want certain bacteria in our environment - we need it - it protects us. That's why we should not be using "anti-bacterial" soaps and cleaners. Because they kill everything, and then we become an open target for the overgrowth of the "bad guys", the harmful mold and fungus. Clorox (chlorine) does the same thing and even the fumes can affect health.

So what do we do? We watch how nature protects and cleans itself and then we copy it. The plant kingdom - when undisturbed - has the ability to control the overgrowth of mold, fungus, and pathogenic organisms from growing where they shouldn't be growing. That's because there are properties in plants, shrubs, fruits, trees, etc., that prevent that overgrowth from occuring. 2. Eyebone Connected to the Liverbone
======================================
Remember this song?. . ."thigh bone connected to the shin bone. . .shin bone connected to the ankle bone. . ." it makes me chuckle. I can't remember the context for this childhood song (maybe you readers can fill me in!) but it was a good learning tool about how our body is "mechanically" connected.

There is also a connectedness in our body that is not "mechanical". There is an interconnectedness between body parts that doesn't make any sense in the "mechanical" model, but it does in the "holistic" model. This is a big part of the difference in conventional medicine and holistic medicine. This holistic interconnectedness has its basis in the Eastern model. For example, acupuncture operates on this theory of interconnectedness - that is why a needle in the toe might help the pain in the neck.

In Chinese medicine and in the eastern healing arts - the eyes are connected to the liver. I learned about this years ago in my macrobiotic cooking classes. When we eat liver supportive foods we can help our eyesight.

My acupuncturist Wayne and I were talking last week about the tremendous health benefits of the Ningxia Red juice. I told him that I increased the amount I was drinking from the recommended one ounce a day to 4 - 6 ounces. I did this because I heard Marcella Von Harding from Young Living recommend that with the higher dose we can really see the miracles. I noticed an improvement in my vision within one week. I also commented to Wayne that people expect this juice to be real sweet like other juices on the market.

It's not, because it doesn't have the junk juices in it like the high sugar/low cost apple, grape, and pear juices. It has wolfberry (also called goji or Lycium barbarum), pomegranate, apricot nectar, blueberry, and some of the citrus essential oils - and it makes you "pucker" a bit when you drink it. 5.Recipe of the Week: Kale and Roasted Vegetable Soup
======================================================
Ingredients:
3 medium carrots, peeled and quartered lengthwise
2 large tomatoes, quartered
1 large onion, cut into 8 wedges or 4 or 5 slices
1/2 small butternut squash, peeled, seeded, cut lengthwise into 1/2 inch thick wedges
6 garlic cloves
1 Tbs olive oil
6 cups or more of vegetable broth
4 cups of finely chopped kale
3 large fresh thyme sprigs
1 bay leaf
1 15 oz can of Great Northern white beans, drained

--Preheat oven to 400 degrees F (reduce heat if using oven fan).
--Spray rimmed baking sheet with nonstick oil spray. Arrange carrots, tomatoes, onion, squash, and garlic on sheet.
--Drizzle with olive oil.
--Sprinkle with salt and pepper.
--Toss to coat. Bake until vegetables are brown and tender, stirring occasionally, about 45 minutes.
--Transfer carrots and squash to work surface. Cut into 1/2 inch pieces; set aside.
--Peel garlic cloves; place in processor.
--Add tomatoes and onion; puree until almost smooth.
--Pour 1/2 cup broth onto baking sheet; scrape up any browned bits.
--Transfer broth and vegetable puree to large pot.
--Add 5 1/2 cups broth, kale, thyme and bay leaf to pot.
--Bring to boil.

Reduce heat. Simmer uncovered until kale is tender, about 30 minutes. Add beans, carrots, and squash to soup. Simmer 8 minutes to blend flavors, adding more broth to thin soup if necessary. Season with salt and pepper. Discard thyme sprigs and bay leaf. Can be made a day ahead. Serves six.

It's Valentine's Day and you want your skin to feel smooth and your body to smell great. Here are two ways to prepare yourself "sweet" for your special someone:

--Sugar Scrub Your Skin
This will make your skin feel very smooth. Sugar cane produces glycolic acid which is a great skin exfoliant. Glycolic acid is used extensively in the spa industry. It is a natural alpha hydroxy acid that helps the skin glow. See how to sugar scrub your skin below in Essential Oil Tip.

--Scent Your Body
Getting sweet isn't always about sugar. One of the definitions of "sweet" in the dictionary is: "pleasing or fresh to the smell; fragrant" A great way to get sweet is to smell fresh. 2. Essential Oil Tip: How To Make A Sugar Scrub
=================================================
This is effective for your whole body. If your facial skin is sensitive don't scrub as hard as you would your feet. Use a plastic container to mix - glass may break in the bathroom. For storage, use glass. Combine:

--1/2 cup olive oil (or coconut oil)
--1 cup of sugar
--Few drops of your essential oil (sandalwood is nice!)

Do this in the bathroom. Use small amounts at a time and massage gently on the skin. You can leave it on for a minute or two for a tightening effect. Rinse.

5.Recipe of the Week: Roasted Red Pepper Soup
==============================================

--4 red bell peppers, roasted, peeled, cored & seeded
--2 c. imported Italian canned tomatoes, seeded & drained
--3 tbsp. olive oil--2 cloves garlic, peeled & finely minced
--3 c. defatted chicken stock
--Salt & freshly ground pepper
--Basil leaves
--Paper thin slices of lemon
Puree three of the peppers and all the tomatoes in a food processor blender until finely textured but not completely smooth. Cut the remaining pepper into julienne strips and set aside. Gently heat the olive oil and garlic. When the garlic releases its fragrance, after about 2 minutes, stir in the pureed pepper and tomato mixture. Add the chicken stock, bring to a boil and simmer for 15 minutes. Season with salt and pepper to taste. Let the soup cool, then cover and chill in the refrigerator. Float basil leaves and a lemon slice in each bowl. Serves 4.

What could be better than the thrill of receiving a romantic love letter from your spouse, lover, or secret friend?

Receiving a "scented" love letter!

February, the "Month of Romance", gives us the perfect opportunity to send love letters, particularly on February 14th which is Valentine's Day.

As a matter of fact one of the legends of the history of Valentine's Day is wrapped around the "love letter".

In Rome, during the third century, a priest by the name of Valentine was imprisoned for continuing to perform marriages for young lovers after marriages were outlawed by Emperor ClaudiusII. Valentine, who was sentenced to death, fell in love with his jailer's daughter who visited him frequently in prison.

Before his death, it is alleged that he wrote her a love letter, which he signed 'From your Valentine'. That expression is still used today. By the Middle Ages Valentine became a saint, and was one of the most popular saints in England and France.

For centuries the Valentine's Card, a shortened version of the love letter, has communicated feelings of love and attraction. The exchange of handmade Valentine cards started in the 1700's. In the 1840's the first mass produced Valentine card was created by the "Mother of the Valentine" Esther A. Howland.

Today we can send Valentine cards electronically - but personally I think receiving a card in the mail makes more of an impact. Also, one of the best ways to anchor a message is with the scent of essential oils. You can infuse your favorite essential oil into your card. Essential oils can carry intention and send subliminal messages of love as well.

2. Essential Oil Tip: How To Scent Your Love Letter

Whether it is a handwritten letter of love or a HallmarkValentine card - you can send the scent of love with your message using these easy steps:

--Place your card or letter (you can use up to 10 cards) in alarge ziplock baggie

--Dowse two cotton balls with your favorite essential oil orblend.

--Place these cotton balls in the bottom corners of the baggie

--Seal baggie and let sit for 2 - 4 days before sending

4.Recipe of the Week: Baked Oysters and Spinach
================================================

Oysters are considered a food of love. The reason is that some oysters change their sex from male to female and back to male. This suggests that the oyster lets one experience thethe masculine and feminine sides of love.

Baked Oysters and Spinach

Ingredients:

1-1/2 pounds fresh spinach, rinsed well and left wet
1/4 cup butter
1 large onion, finely chopped
large pinch of freshly grated nutmeg
salt and freshly ground pepper to taste
1 cup heavy cream
1 cup fine dried bread crumbs
1 quart shucked fresh oysters
2 tablespoons finely chopped fresh dill or 2 teaspoons dried

Instructions:

--Place the spinach in a large saucepan, cover, and steam over moderate heat for about 5 minutes or until tender.

--Drain the spinach, refresh under cold water, squeeze dry, and chop finely.

--Preheat oven to 400 degrees F.

--In a large skillet, heat half the butter, add the onion, and sauté over moderate heat for 5 minutes, stirring often.

--Add the spinach, nutmeg, salt, pepper, and cream.

--Stir well and cook over moderate heat for about 2 minutes, stirring in a few bread crumbs if necessary to thicken the mixture.

--Add the oysters and dill and stir well.

--Spoon the mixture into a well-buttered baking dish, sprinkle the top with bread crumbs, dot with the remaining butter, and bake for 10 to 15 minutes or until the top is golden brown.
