1.Popping the Popcorn Myth
===================================

How many times have we heard that popcorn is a good healthy
snack? It's a given! Popcorn has been a fun, healthy snack since
ancient civilization.

Americans are eating 17 billion quarts of popcorn a year.

How many of them do you think are microwaving their popcorn?
Probably most (not me - I don't own a microwave).

There are findings now that microwaving butter flavored popcorn
can cause damage to our lungs.

The chemical of concern is in the artificial butter flavoring and
known as diacetyl. When heated the fumes are reported to be
toxic.

This was discovered by the National Institute of Occupational
Safety and Health when 31 people who worked at a popcorn factory
were diagnosed with severe lung disease. It has been linked to
breathing vapors from a butter flavoring. Eight are on waiting
lists for lung transplants.

This lung condition, known as bronchiolitis obliterans (which
translates to "destroying the lungs), is starting to crop up in a
variety of places throughout the country.

Meanwhile what are healthy ways to make popcorn?

Consider air popped popcorn as a healthier choice over the
microwaved style.

My favorite way of making popcorn is the old fashioned way of
popping in a pot on the stove. Organic popcorn kernels popped in
virgin coconut oil is one of the healthiest ways of making
popcorn today.

Here's a tip from Arrowhead Mill Organic Popcorn:

If there are too many unpopped kernels left in the popper, the
popcorn may be dried out too much. Put the bag in the freezer for
a few hours or overnight. This puts moisture back into the
kernels.

2. Do You Eat Alone?
======================

There is a study that says that the family meal is good for one's
health.

This decade long study from the National Center on Addiction and
Substance Abuse (CASA) focused particularly on teens.

Teens who had regular family meals were less likely
to get into fights, think about suicide, smoke, drink, use drugs,
or get involved in sexual activity.

It also showed that eating with the family was associated with a
higher intake of fruits and vegetables.

3. Your Menopause Questions

I decided to take any and all of your questions about natural
approaches to menopause when I interview Susun Weed this Thursday
night in my monthly "Green Tea with Marilee" teleseminar - even

This is Orville Redenbacher-style - you can adjust ingredients to
be healthier. Thanks again Valeria!

Prepare 8 cups popped Orville Redenbacher'sĀ® GourmetĀ® Popping
Corn and 1/4 cup REAL butter (use organic!) melted drizzled over
hot popcorn.

You can add one of the following:

--1 tsp. garlic salt
--1/2 cup parmesan cheese
--Italian salad dressing mix (use 1/2 of a .7 oz. pkg. which is about 1 Tbsp.)
--2 Tbsp. instant lemon-flavored iced tea mix (if using
unsweetened add 1 Tbsp. agave)
--3 Tbsp. chocolate flavored drink mix or natural cocoa
--Sprinkles of cinnamon
--Any other spices or flavors!

Dilute with one part vegetable oil and apply to wrists, neck, and

6.Recipe of the Week: Hot Flash Salad
======================================

Chopped Kale Salad with Spiced Almonds and Red Peppers.

2 T. olive oil, divided.
1 t. curry powder.
1/2 t. cumin.
1 t. unfiltered honey.
1/2 c. raw almonds.
1/2 c. pitted kalamata olives.
1 small red pepper, seeded and cut into thin strips
1/2 large bunch of kale, washed, stems removed, and chopped.
1/4 c. crumbled feta cheese.

Preparation tip: Use bumpy, dark green dinosaur lacinato kale,
which tends to be less bitter and tough than curly-leafed kale.

--Preheat over to 400 degrees.
--In a medium bowl, combine 1 T.olive oil, curry powder, cumin,
and honey. Mix well.
--Add almonds and toss to coat.
--Spread almonds in a single layer on one third of a baking
sheet.
--Place olives on the middle one-third and red peppers on the
remaining one-third.
--Roast for 10 minutes. Remove from oven and let cool.
--Place kale in a medium salad bowl and drizzle with remaining
olive oil; sprinkle with salt and pepper, and massage with hands
to coat leaves.
--Add feta cheese, roasted peppers, roasted almonds, and roasted
olives; toss and serve.

A mother is the truest friend we have, when trials, heavy and
sudden, fall upon us; when adversity takes the place of
prosperity; when friends who rejoice with us in our sunshine,
desert us when troubles thicken around us, still will she cling
to us, and endeavor by her kind precepts and counsels to
dissipate the clouds of darkness, and cause peace to return to
our hearts.

6.Recipe of the Week: Roasted Asparagus Quiche
===============================================

Great breakfast idea for Mother's Day!

1 bunch fresh asparagus
1/2 tbsp olive oil
1 pie crust
5 large eggs
1-1/4 cup milk
1/2 tsp salt
1/2 tsp pepper
1/2 cup shredded swiss cheese

- Clean, trim and drizzle extra virgin olive oil over the
asparagus. Wiping the oil on with your hands will give you better
coverage. You can also use a pastry brush. Roast for 20 minutes
at 450 F.

- Reduce oven heat to 425 F. Place crust in pie plate and line
crust with wax paper. Add ceramic pie weights, dried beans or
rice. Bake 25 - 35 minutes until golden brown.

- Remove the crust from the oven. Reduce oven temperature to 375
F. Chop roasted asparagus into 1/2" lengths. Beat eggs, milk,
salt and pepper with a fork.

- Place asparagus evenly in the bottom of the baked crust. Add
grated cheese then pour in the beaten eggs.

- Bake at 375 degrees for 30 - 35 minutes until browned on top.

Someday when the children are old enough to understand the logic
that motivates a parent, I will tell them:

I loved you enough to ask where you are going, with whom, and
what time you would be home.

I loved you enough to insist that you save your money and buy a
bike for yourself even though I could afford to buy one for you.

I loved you enough to be silent and let you discover that your
new best friend was a jerk.

I loved you enough to make you pay for the toy you had taken and
tell the clerk' " I stole this yesterday, and I want to pay for
it."

I loved you enough to stand over you for two hours while you
cleaned your room, a job that should have taken 15 minutes.

I loved you enough to let you see anger, disappointment, and
tears in my eyes. Children should know that their parents aren't
perfect.

I loved you enough to let you assume the responsibility for your
actions even when the penalties were so harsh, they almost broke
my heart.

But most of all, I loved you enough to say NO when I knew you
would hate me for it.

Those were the most difficult battles of all. I am glad I won
them, because in the end, you won too . And someday when your
children are old enough to understand the logic that motivates
parents, you will tell them.

4. Essential Oil Tip: Cut Down on Those Flashes

This is right out of the Essential Desk Reference
-but my greatest learning about this tip has come
from numerous women I have met over the years. This
works like a charm to prevent lots of heat.

Endoflex essential oil blend under each ankle on
both feet at least twice a day. It simply balances
the hormonal system.

Do it in the morning and at night.

And when the heat is on and you want to cool down -
put a drop of peppermint on your hands and rub the
back of your neck.

6.Recipe of the Week: A Healthier Twist. . .
=============================================

I have to admit, I was feeling a bit unsure when I put
the recipe in last week's issue because of the heavy cream.
But I put it in anyway.

I received an email from Dorothy, a Home Spa Lady reader, with a
great alternative to the cream for the Asparagus Soup. I got
her permission to share it with all of you, so here it is -
directly from her email - in conversation style.

Hi Marilee -

I have been making a cream of asparagus soup for many years now
and right after I made my very first batch I really felt I could
do without the cream part. What I use in place of the cream/milk
are potatoes. Yup. I chop them into squares and put them in
early on (my favorite are organic red potatoes and leave the
skins on). It simply makes the best pot of soup. Enjoy.

Hi Marilee-

I would be delighted if you wanted to share that information.
Generally, I will use 1 pound of asparagus. I'll give you my
recipe - it is in my head, so feel free to adapt it to your
liking. Before I tell you about it though I have to tell you
about something my sister, Evelyn, sent me. It was info about
olive oil not being able to withstand high temps and how it is
altered molecularly, and ever since then I do all of my sauteing
in organic coconut oil. I absolutely love the subtle flavor it
lends to ALL of my dishes cooked that way.

2-3 Tbs organic coconut oil
1 1/2 cups chicken stock
1/2 cup diced onion
1 cup water
1/2 cup diced celery
2-3 medium red potatoes w/skin, cubed
2 cloves finely chopped garlic
1 lb asparagus cut in 1" pieces, remove woody ends
1/2-1 tsp salt to taste

If you can, purchase all organic ingredients, it really makes a
difference.

--Dice onion, celery and garlic.
--In a large pot over medium heat add coconut oil and saute the
onion, celery and garlic 4-5 minutes stirring frequently.
--Add chicken stock, water, potatoes and salt.
--Cook on medium/high heat about 8-10 minutes (potatoes will
begin to get tender).
--Add asparagus and cook for 8-10 minutes longer or until
asparagus & potatoes are cooked.
--In a blender or food processor pulse to lightly puree.
--Serve warm.

Feel free to add a little/take away a little to your taste.

I've seen two shows lately that went on and on about how mid-
life is a great time for women.

Just last week Oprah had a whole show on how great menopause will
be....Puhleeeeeeeze!

I've had a few thoughts of my own and would like to share them
with you.

Whether you are pushing 40, 50, 60 (or maybe even pushing
your luck), you'll probably relate.

Mid-life is when the growth of hair on our legs slows down.
This gives us plenty of time to care for our newly acquired
mustache.

In mid-life women no longer have upper arms, we have wing spans.
We are no longer women in sleeveless shirts, we are flying
squirrels in drag.

Mid-life is when you can stand naked in front of a mirror and
you can see your rear without turning around.

Mid-life is when you go for a mammogram and you realize that
this is the only time someone will ask you to appear topless.

Mid-life is when you want to grab every firm young lovely in a
tube top and scream, "Listen honey, even the Roman empire fell
and those will too."

Mid-life brings wisdom to know that life throws us curves and
we're sitting on our biggest ones.

Mid-life is when you look at your know-it-all, beeper-wearing
teenager and think: "For this I have stretch marks?"

In mid-life your memory starts to go. In fact the only thing we
can retain is water.

Mid-life means that your Body By Jake now includes Legs By Rand
McNally -- more red and blue lines than an accurately scaled map
of Wisconsin.

Mid-life means that you become more reflective . . .You start
pondering the "big" questions like:

--What is life?
--Why am I here?
--How much Healthy Choice ice cream can I eat before it's no
longer a healthy choice?

But mid-life also brings with it an appreciation for what is
important.

We realize that breasts sag, hips expand and chins
double, but our loved ones make the journey worthwhile.

Would any of you trade the knowledge that you have now, for the
body you had way back when?

Maybe our bodies simply have to expand to hold all the wisdom
and love we've acquired.

That's my philosophy and I'm sticking to it!
